Our story

How it all started

Founded on the Danish Island of Bornholm, Kadeau is a celebration of the traditions and beauty of the island, told through the story of food.

Our first restaurant, Kadeau Bornholm, opened in 2007 on the sandy beach of Øster Sømarken on the southernmost tip of the island. In 2011, we expanded and opened Kadeau Copenhagen in the historic Christianshavn quarter of the city.

Kadeau Bornholm was awarded a Michelin Star in 2016, the first – and to this day only – restaurant on the island with the esteemed accolade. Kadeau Copenhagen was awarded 2 Michelin Stars in 2018, and has retained them since. Both restaurants were awarded a Michelin Green Star in 2023, recognising Kadeau’s strong commitment to sustainability.

Kadeau was founded by childhood friends Nicolai Nørregaard, Rasmus Kofoed and Magnus Klein Kofoed – all three of them Bornholm natives. In 2022, long-term friend and head chef Kyumin Hahn became part of the senior management of the restaurant as partner.

Our garden

Kadeau Garden

Our dedicated kitchen garden is located less than a kilometre from our restaurant in Sømarken. Started in 2012 by Nicolai’s father, Flemming, the Kadeau garden now has four plots, including two greenhouses, and provides both the Bornholm and Copenhagen restaurants with fresh herbs, fruits, vegetables and honey during the warmer months. At the same time, the team works tirelessly to preserve the garden’s bounty to be enjoyed during the winter months.

The garden is now run by Emil, a former sous-chef of the restaurant, who has worked tirelessly to create healthy soil culture and established sustainable permaculture practices. As with everything at Kadeau, the garden is constantly developing and adapting to suit the needs of the two restaurants throughout the year.

Our ceramics

True craftmanship

Bornholm’s handcrafted traditions are ever-present. The ceramic culture is wide-spread with almost twenty independent ceramicists on the island – and the Royal Academy’s prestigious glass and ceramic school is also located on the island. Due to Bornholm’s historic culture of self-sufficiency, almost every home has handmade ceramics. We therefore take great pride that our tableware reflects this tradition.

All of our ceramics are made by ceramicist Torben Lov, who trained with Nicolai’s father. Torben’s studio, Lov i Listed, is located on the east coast of Bornholm, and for over fifteen years, Nicolai has worked closely with Torben to design and create every single piece – sketching designs and discussing materials. A truly collaborative process, for every season a new line of ceramics is created, where the designs are at times guided and inspired by the menu Nicolai has created, and at other times, the ceramics even influence the menu.
